Allergen and Food-Safety Notice

Version 2026-10-20 · Effective October 20, 2026

This notice applies to all food and drink served by Twisp River Catering, a DBA of Zoe Ophelia Holdings LLC. It is part of our Catering Booking and Deposit Agreement.

Allergens and cross-contact

  • Our kitchen and event setups handle the major food allergens: milk, eggs, fish (including steelhead), shellfish, tree nuts, peanuts, wheat, soy and sesame. Some menus also use pork, beef, gluten-containing beer and smoked products.
  • We take care to keep dishes separate and label them, but we cannot guarantee any dish is free of allergens or from cross-contact. Shared smokers, grills, fryers, cutting surfaces and serving areas are used at our events.
  • Buffet, family-style and station service let guests serve themselves or share serving utensils, which raises the risk of cross-contact. For guests with severe allergies, ask us about an individually prepared, sealed plate.
  • Ingredients from suppliers can change without notice. Product labels and recipes may vary by season.

What we need from you

  • Tell us in writing about every guest allergy and dietary need at least 14 days before your event (with your final count). Include how severe each allergy is.
  • Share this notice with your guests, and ask guests with allergies to speak with our catering captain at the event before eating.
  • Guests with severe allergies should carry their own medication (for example, an epinephrine auto-injector).

Raw and undercooked food

Some items may be served raw or undercooked, or may contain raw or undercooked ingredients, for example seared ahi tuna, cooked-to-order steak or prime rib, and some dressings or sauces. Consuming raw or undercooked meats, poultry, seafood, shellfish or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions.

Food safety at your event

  • Our food-handling staff are required to hold Washington food worker cards and follow Washington State Retail Food Code time and temperature rules.
  • Food is held at safe temperatures for the service window in your proposal. Food that reaches its safe time limit is removed.
  • Because of food-safety rules, served or displayed leftovers are not packaged for guests to take home unless we agree in writing and you sign our leftover release. Once food leaves our control, we are not responsible for how it is stored, reheated or eaten.
  • Food from other sources (for example, a cake from your baker or a guest's homemade dish) is not prepared or checked by us, and we are not responsible for it.

Liability

To the fullest extent the law allows, we are not responsible for allergic reactions or illness caused by allergens or dietary needs you or your guests did not tell us about in writing, by food not provided by us, or by food after it leaves our control. Our full liability terms are in Section 11 of the Booking Agreement.
